As we get closer to this holiday season, the weather gets colder, we spend more nights at home, I would like to share some delicious holiday baking. In my house, I am the go to person when it comes to wanting a sweet treat. Here I will share a few of my favorite recipes as well as how to make everything!
- Hot Chocolate Rice Krispies
The perfect mix of chocolate and marshmallow won’t fail to bring a smile to your face.
Ingredients
- 4 tablespoons butter
- 4 cups mini marshmallows
- 1 packet hot chocolate mix
- 5 cups cocoa krispies
To get started you’re going to want a large pot. Melt butter on low heat until the butter is completely melted. While the butter is melting you can add that packet of hot chocolate. Once the butter is melted you’re going to add your marshmallows. Be sure to add them little at a time and make sure you dont over overcook the marshmallows, you want to make sure the marshmallows are completely melted before adding in the rest. Once your marshmallow and butter mixture are melted all the way you can start adding in the cereal. Make sure you give the marshmallow mixture and cereal a good mix. After mixing you can add some more mini marshmallows for decoration. Set Krispies in a large pan, cover in plastic wrap, and let sit in the refrigerator for 30 min to one hour. After their set, cut and serve:)
- White chocolate dipped chewy maple cookies
A holiday cookie I bake every year, perfect to add to your holiday cookie tray!
Ingredients
- 2 ⅓ cup of all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (8 tablespoons) unsalted butter
- 1 cup packed brown sugar
- 1 large egg
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon maple extract
White chocolate glaze ingredients
- One white chocolate baking bar
- ¼ cup of heavy cream
- ⅔ cup of powdered sugar
To get started whisk together all of the dry ingredients (flour, baking soda, and salt) all in a separate bowl. Next use a mixer to cream the butter and brown sugar together on medium speed until smooth. Then beat in the egg until well combined. Add the maple syrup and extracts into the bowl, beat until well combined. Next start pouring your dry ingredients little at a time until well combined. Cover dough with plastic wrap and let chill in the fridge for a couple of hours before rolling into cookie shape. Preheat the oven to 350 degrees and bake for 12-13 min until lightly brown on the sides.
To make the white chocolate glaze you’re going to chop the chocolate bar into small pieces. Next you’re going to heat up the cream in a microwave safe bowl for about 45 seconds. Next pour the cream over the chocolate and let sit for 5 minutes to melt the white chocolate. Then, stir with a spatula. Add the powdered sugar to the bowl, and whisk until fully combined. Let the glaze sit for an additional 5 minutes to thicken before drizzling it over the cookies.
- Christmas Frosted Sugar Cookies
Soft and fluffy vanilla sugar cookies with delicious cream cheese icing!
Ingredients
- 1 cup (2 sticks) unsalted softened butter (DO NOT MELT IN MICROWAVE) let sit out room temperature for a couple of hours
- 1 cup sugar
- 2 tsp vanilla extract
- 1 egg
- 2 ½ cups flour
- ¼ cup cornstarch
- ¼ teaspoon salt
- 3 tsp baking powder
Cream Cheese Frosting
- 8 oz cream cheese, softened
- 4 tablespoons (½ stick) unsalted butter (do not melt in microwave)
- 2 teaspoons vanilla extract
- 2 ½ cups powdered sugar
- Christmas sprinkles for topping
First you will beat together the butter and sugar, then slowly add in the vanilla and egg as you keep mixing. Mix together your dry ingredients (flour, cornstarch salt, baking powder, salt) in a separate bowl. After dry ingredients are mixed slowly add dry ingredients to wet ingredients in portions until all combined. While the cookies are baking, make the cream cheese frosting by beating together the cream cheese, butter, vanilla extract, and sugar. Once cookies are ready and frosted add christmas sprinkles or any sprinkles of your choice!
- Gingerbread Loaf
The perfect soft must have this holiday season since starbucks discontinued this deliciousness
Ingredients
- 2 ½ cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoon ground ginger
- ½ tsp nutmeg
- 1 tsp ground cinnamon
- ½ teaspoon allspice
- ½ cup unsalted butter (melted)
½ cup brown sugar - ⅓ cup molasses
- 1 egg
- 1 cup buttermilk
Preheat the oven to 350 degrees. In a bowl whist together the dry ingredients (flour, baking soda, ginger, nutmeg, and salt) next in another bowl mix cream together the sugar and butter until well combined. Add the molasses and vanilla. Mix well. Add the egg until well mixed. Add the dry ingredients to the sugar mixture alternatively with the buttermilk sitting just until blended after each addition. Put the batter into a large pan and bake for 45-50 minutes. If the bread is getting too brown on top, cover loosely with foil to finish baking. Allow the bread to cool completely, then dust with powdered sugar.
*OPTIONAL* You can also make the white chocolate glaze. I put ingredients for White Chocolate Dipped Maple Cookies and spread that on top of the bread.
