The Red Ledger: What is the best part of your day?
Jackie Palovik: The best part is coming in the morning, seeing how everybody’s evening was, saying “hello” and getting the day started.
TRL: What is the worst part of your day?
JP: The worst part is, if for some reason, a child comes up for a certain food, and we had run out.
TRL: What do you hope for the rest of the school year?
JP: I hope the vaccine becomes available soon, so we don’t have to wear masks all the time. I want to see everybody’s faces. We also have to use a lot of products to wrap everything in because nothing is out. We have to wrap everything we are using in styrofoam, which is a waste.
TRL: What does a typical day in your life look like?
JP: A typical day starts with looking at our menu for the day. We make sure the equipment is working, and we turn everything on. We now also have to make sure we sanitize everything as well.
TRL: What does preparation look like?
JP: We get shipments twice a week on Mondays and Thursdays. Right now, we are not as busy as we usually are, so we are a day or two ahead in prep.
TRL: What are your ambitions?
JP: We hope to increase the student participation within our meals. That’s what we are here for; to serve to students. We hope that more students can come in and be safe.
